Bacon rollies – homecooking wreckventure

Waking up on a Saturday morning of a weekend with a work shift isn’t overly pleasant, but since work starts at 11am anyway, plenty of time to make breakfast.

So as per usual, I found this recipe floating around the internet. “Bacon Rollups”. It’s bacon rolled in French toast. BACON rolled in FRENCH TOAST. How awesome is that?! There are many ways to “level up” the flavours depending on what you like. Over the weekend I’ve done up some with cinnamon sugar, brown sugar, vanilla sugar as well as maple syrup for that extra flavour kick.

Each bacon rollies will require a rasher of middle bacon, a slice of white bread with crust off, and French toast egg mixture. (Recipe is repeated at the bottom of the page)

Ingredients for 10 rolls:

10 slices of white bread crust off
10 strips of bacon (same length as bread)
3 large eggs
5 tbs milk
3 tbs raw sugar
Cinnamon sugar or maple syrup to taste

1) Begin by laying strips of bacon on a baking tray in a fan forced oven set at 200 degrees Celsius. Pop it in and set a timer for 8mins per side. Prepare all the other steps while bacon is cooking.

2) Slice the crusts off sliced white bread. I prefer “toast” thickness instead of just the sandwich slices. Any bread is fine, here I prefer white.

3) For a standard French toast mix, whisk 3 eggs with 5 tbs of milk and 3 tbs of raw sugar till well combined.

4) Bacon should have been flipped over once, and baked for 8 mins per side. When that is done, take it out of the oven. I like my bacon just a bit chewy, if you prefer crispy, bake bacon a little longer.

5) When ready, set the bacon on some absorbent paper to drain the fat.

6) Lay a strip of bacon across each slice of bread and roll it up.

7) Dip each roll into the French toast mixture and onto a heated frying pan with a little melted butter.

8) Fry them up on 1 side on high heat, and flip them over. Turn heat down to a medium low and cover the pan with a lid. Cook for 2 mins.

9) After 2 mins, the egg mixture soaked into the bread should be cooked through. Sear the other 2 sides to brown.

10) Time to plate up!

Sprinkle some cinnamon sugar or maple syrup on top and enjoy with a cup of coffee. Please note that this is rather addictive.

Bacon Rollies

Ingredients:
10 slices of bread (crust off, white is preferred)
10 strips of streaky bacon
3 large eggs
5 tbs milk
3 tbs raw sugar
Cinnamon sugar or maple syrup to taste

Steps:
(1) Preheat oven 200’C
(2) Lay bacon out on baking sheet, and bake in oven for 8mins each side.
(3) While bacon is cooking, cut crusts off white bread.

Prepare French Toast Mixture:
– 3 Large Eggs, 5 tbs whole milk, 3 tbs raw sugar
– Whisk together and set aside

(4) Take bacon out of oven and drain on paper towel.
(5) Roll each strip of bacon in bread.
(6) Heat up some butter on a frying pan. Dip each roll in French Toast Mixture and brown on 1 side on high heat before flipping each roll over.
(7) Turn heat down to medium low, cover the pan with a lid and cook for 2 mins.
(8) Remove lid and brown all edges of the rolls.
(9) Serve with maple syrup or cinnamon sugar.
